RECIPE – a mushroom hunter's ultimate achievement: a classic mushroom sauce, served with LAND-LEBEN bread dumplings
Ingredients (serves 4):
- 400 g mushrooms (in season - ceps, button mushrooms, etc.)
- 41 chopped onion
- 4250 ml beef broth
- 4250 ml heavy cream
- 430 g flour
- 4100 g butter
- 42 bay leaves
- 410 peppercorns
- 46 allspice berries
- 41/2 TSP of ground caraway
- 41 TBSP of chopped parsley
- 4Salt
Preparation:
Sauté the onion in approx. 50 g of heated butter. Add flour, brown briefly and add the beef broth and heavy cream. Bring to a boil, stirring vigorously with a whisk. Add spices and simmer for 15 minutes. Slice the washed mushrooms and sauté in the remaining butter. Pour the sauce through a sieve and over the mushrooms, bring to a boil and season with salt and chopped parsley.

10 hiking tips for a perfect fall outing

It happens all the time: you arrive on the mountain only to discover that you've forgotten something again. We have put together 10 useful tips to make sure your fall hike will be a memorable experience:
- Make sure you plan your hike carefully. Discuss how far you want to go, the level of difficulty, arrival and departure and get useful information guidebooks, hiking maps or the local hiking club.
- heck the weather conditions. Listen to the weather forecast, and take along rain and wind gear as well as sunscreen.
- Plan a hike with the right amount of physical exercise. It can be exerting but should not be over-exerting. You can work up a sweat but should still be able to talk comfortably.
- Stop for a break. Keep up your walking pace. Plan to stop for a break every two hours and try to avoid other interruptions.
- Take the right gear on your hike and leave unnecessary items at home. Make sure you break in your hiking boots before you set off on your first hiking trip. A backpack with a capacity of 20 – 30 liters is ideal for a one-day trip.
- Make sure you have enough to eat and drink while hiking (preferably fruit juice or mineral water) or stop somewhere on the way (at least 2 liters for a day trip). Pack a snack for the trail: fruit, muesli bar, sandwich.
- Stay on marked trails.
- Turn back if bad weather threatens or if danger arises.
- A first aid kit is essential for climbing safety (flashlight, cell phone, bandages for blisters and important medication).
- In case of an emergency, keep calm and call the rescue team.
